Few things can make your tastebuds jump for joy quite like the sight and smell of a fresh batch of cupcakes.

Whether you’re a weekend warrior or an elite athlete prepping for that next big comp, our Sports Dietitian team at WAIS have got the next snack smash-hit for you!

Julie Meek has shared her fabulous Mini Orange Almond Cupcakes recipe and they’re perfect for your next post-training super snack, whilst also boasting a fantastic flavour hit well known to WA locals.

Julie says:

  

These are delicious little morsels right here! They are my Orange and Almond Cupcakes that highlight our fabulous citrus fruits from Western Australia, whilst containing protein from the almonds for the win!

  

Either lemon or orange works well and these guys are perfect as a recovery snack with a glass of milk post-training.

  

What you’ll need:

  •  3 eggs
  • Rind of one orange/lemon
  • 1/2 cup sugar
  • 2 cups grated carrot
  • 1 tblspn poppy seeds
  • 1/4 cup plain flour
  • 1/2 cup SR flour
  • 100g Almond meal

Process:

  • Beat eggs, rind and sugar with an electric mixer until light and fluffy.
  • Stir through carrot, almond meal, poppy seeds and flours.
  • Spoon mixture into a 12 cupcake tin and bake in a moderate oven for 20 minutes.
  • For the icing mix 1/2 cup icing sugar and enough juice from the orange/lemon used earlier to make a slightly runny mixture that can be drizzled over each cake.
